Potato and cottage cheese patty with pomegranate filling

Have you ever created something delicious to eat with no plan to make it? Today, I had no plan to make what I did and I am so glad with the impromptu dish that I am all excited to share it with you. I was wondering what I would do with the extra half litre of milk that I had purchased. Then, I recalled that whenever milk was extra my mother would make cottage cheese with it. It’s easy to make  (http://www.allotment.org.uk/). As I was making the cheese, I thought that since I already have some boiled potatoes why not try combining both and make some patties. After all what have I got to loose, except some milk, potatoes and my time?

Ingredients:

  1. Cottage cheese made from ½ l milk
  2. 5 medium size potatoes
  3. 2 tea spoon salt
  4. 1 green chilli
  5. Some coriander
  6. 1 slice of bread
  7. Pomegranate seeds
  8. 8 tea spoons of white oil
Number of patties: 8. But remember, no one can stop at just one.

Mixed all the above ingredients excepting pomegranate and then kneaded smoothly like you would do for dough. Checked for the salt and found it just right. Rolled the above mixture on my palm and then made a well to fill in the pomegranate seeds. I tell you, this was the best part of the dish. Closed the well with potato filling and flattened to make 4 inch diameter patties. The bread makes the patties firm by absorbing extra moisture. While I was making these, I put a shallow pan to heat and added 8 tea spoon of oil. When the pan was really hot, I gently put in one batch of patties to shallow fry on low flame. I let it cook nicely for 5 minutes without disturbing and then carefully turn them over using a flat spatula. Then I cook the other side also for 5 minutes and smile at my creation. When my neighbor bit into one, she told me the best thing she liked was the pomegranate filling as it was so unexpected.

yummieee...it looks. Thanks for suggesting saturday morning breakfast..might go out with the family and nothing like packing and carrying such interesting stuff for the journey. Girls would enjoy...potato and cottage cheese together!!!
